Fourth of July Dessert Pizza (Paleo, Gluten Free, Dairy Free)
Happy Fourth of July!!!! 🇺🇸 One of my favorite holidays has finally arrived! I wonder when I will stop saying that about every holiday 🤔
When I was in college, I had my tonsils taken out right before the Fourth of July and I was DEVASTATED because that meant I couldn’t enjoy the delights of the holiday: salsa, cheese dip, hot dogs, tasty treats! Now that I’m living a paleo/gluten free lifestyle (definitely wasn’t living that way in college đźŚđźŤ”🍕) I don’t want to miss out on the goods either! That’s why this dessert pizza hits the spot!
This is such an easy dessert option and you don’t have to worry about any of your friends with allergies! No dairy, no gluten, and you can also make it nut free (I used almond milk cheese for the frosting)! Cassava is truly the holy grail of gluten free flours because it doesn’t have that grainy texture that so many people dislike about almond flour. It is as close a substitute as you will find to wheat flour and is actually a 1:1 substitute in most cases. It’s high in vitamin C and also contains iron, B6, magnesium, and calcium. I have personally loved experimenting with it and I will continue to! I like to buy my cassava flour from Thrive Market. I usually buy Otto’s Cassava Flour which I have loved. I just bought the Thrive brand but haven’t tried it yet. I will be sure to share how I like it compared to Otto’s!

Fourth of July Dessert Pizza
ingredients:
- 1.5c cassava flour
- 1/2c palm shortening
- 1/2c maple syrup
- 1 container Kite Hill cream cheese (or regular cream cheese for nut free)
- 1/4c maple syrup
- 1T maple sugar
- Blueberries
- Strawberries
- Raspberries

How to cook Fourth of July Dessert Pizza
- Preheat oven to 325F. Add cassava flour to a large bowl. Add palm shortening. Use a pastry cutter to blend until crumbly. Add maple syrup and blend more. Bake for 20 minutes. Let cool.
- Using a hand or standing mixer, blend cream cheese, maple syrup, and maple sugar until light and fluffy. Ice crust liberally.
- Wash and slice berries and place in an American flag design! Keep in the fridge.
