Air Fryer Salmon (Whole30, Paleo, Dairy Free, Gluten Free, Grain Free)
I have always loved fish but I haven’t always loved salmon. I know it’s a fish, but sometimes it just can taste too “fishy” for me. You know what I mean. But I love the nutritional benefits of salmon (high protein, low carb, high in b12 & b6) so I had to find a way to enjoy it. Turns out, slathered in pesto, it’s delicious! I’ve grown to love salmon and REALLY love it cold as leftovers for lunch. Is that weird? It feels weird to me, but I can’t help myself.
You have probably noticed my recent obsession with my air fryer. I love it so much! (Here is the link for the air fryer I have and love- pricey but worth it in my opinion. I have used it daily since purchasing!) I tried making salmon in mine, as well as barramundi, and it worked great! Such an easy healthy weeknight dinner!
I make this meal about once a week and usually serve it with roasted asparagus, crispy potatoes, and top the salmon in my creamy pesto sauce. It is delightful! I always make extra to have for lunch the next day. I have been doing less food prep and more eating leftovers because it’s soooo much easier on me + my time. I hope you love this salmon! Air Fryer Salmon
ingredients:
- 2 filets of salmon
- 1/4t sea salt
- 1 lemon, sliced
instructions:
How to cook Air Fryer Salmon
- Season each filet with 1/8t sea salt and 2 lemon slices. Cook at 350F in the air fryer for 10 minutes. Serve with creamy pesto!
