It’s finally fall here in Arkansas! It’s so nice to be able to go on a walk without melting. We had such a fun filled weekend of going to the zoo, the park, the pumpkin patch- all those wonderful fall things! I love how fall brings with it the anticipation of the holiday season and the warm snuggles that come with cooler weather. My foodie faves for fall- warm food- chili, soup, oatmeal, coffee replace smoothies and salads. And one of my favorite… this harvest bowl!

This harvest bowl has the nutrition of a salad with the comfort of a bowl of mashed potatoes. It’s warm, it’s filling, and it’s incredibly nourishing. The best part is, it’s ONE PAN. That means you only wash one pan + whatever dishes you eat on. It also only takes about 20 minutes from start to finish. I was actually surprised the first time I made it!

Here’s the scoop on substitutes… for dairy free, omit feta. For whole30, omit feta and make sure your chicken apple sausage and bacon are whole30 compliant. I like Nature’s Rancher for whole30 bacon. If you can swing it financially, I recommend using a super high quality, aged balsamic vinegar. The more aged, the thicker it is and the flavor is soooo much better. You’re going to love this!

One Pan Harvest Bowl

ingredients:

  • 12 oz chicken apple sausage 
  • 6 pieces of bacon
  • 1/2 yellow onion, diced
  • 3c shaved brussels sprouts
  • 1/4t salt
  • 1/4c balsamic vinegar
  • 6 oz feta, for topping

instructions:

How to cook One Pan Harvest Bowl

  1. Cook sausage in pan on medium heat with a very small amount of oil. Remove from pan and set aside. Cook bacon in same pan on low heat until crispy. Remove and set aside. Cook onion and Brussels in bacon fat until tender. Add balsamic vinegar and cook down for 5 minutes. Add sea salt. Crumble bacon and add. Add sausage. Top with feta and enjoy!
