Flourless Chocolate Chip Cookies (Gluten Free, Flour Free, Dairy Free, Grain Free, Paleo)
I’M BACK!! In case you didn’t know, our family took a really sweet trip to Disney! I’m debating whether or not to do a full Disney recap blog post… so be sure to let me know if you’d like to see that. In the meantime… I’m so excited to share another flourless recipe with you! And this time, it’s COOKIES!
Cookies are my one TRUE weakness. Keep your bread. Keep your dairy. I don’t need sandwiches. But cookies? Oh no, don’t take my cookies! Anytime I’m really stressed, overwhelmed, or sad I always, always say, “I really need a cookie.” Once, when we were trying to get pregnant and my IVF cycle got canceled, I told my husband I needed a cookie and that blessed man came home with a giant ice cream cookie cake. It was everything I needed in that moment!
Now back to these beautiful little babies. They are nut butter based, so I’m sorry my nut allergy friends, but these won’t work for you. You cannot sub sun butter for these because sun butter + baking soda = green cookies. Isn’t that wild?! The chemical reaction causes them to turn green! So, you can’t sub sun butter but I have tried cashew butter, almond butter, and pecan butter. So those are all great options if you are a fan of one and not the other. Lately I have been enjoying the “simply balanced” brand of cashew butter from target for several reasons. 1. The price point can’t be beat and 2. it doesn’t have any sugar added- just roasted cashews! Be sure to check the ingredients of your cashew butter to make sure no sugar is added because it honestly isn’t needed. I almost bought some at Walmart but it had added sugar.
These cookies are very delicate since they are flour free, but incredibly delicious! Crunchy on the outside, soft and gooey on the inside… just what a perfect cookie should be. Flourless Chocolate Chip Cookies
ingredients:
- 1c cashew butter (sub pecan butter or almond butter)
- 1/2c maple sugar
- 1 egg
- 1t baking soda
- 1/2c chocolate chunks
instructions:
How to cook Flourless Chocolate Chip Cookies
- Preheat oven to 325F. Add all ingredients to a mixing bowl. Stir. Scoop cookies on parchment lined baking sheet. Baking on top rack for 12 minutes. Let cool for 10 full minutes before enjoying!
