Chocolate Protein Chia Seed Pudding
Chia seed pudding is a gift to humanity. I’ll admit- the first time I tried it I wasn’t into it. I think it’s because my expectations were off kilter. I expected “puddin’ cups” when I should have been expecting tapioca pudding. Have you ever had tapioca pudding? My grandfather LOVED it so it evokes a really sweet memory for me. Chia seed pudding is very similar to tapioca, but a little more crunch.
Chia seeds are not only delicious, they are extremely nutrient dense! They are a powerhouse in a tiny package- like Smurfs. Chia seeds boast 20% protein content, more fiber than flax seeds, high omega-3 fatty acids, as well as high quantities of calcium, phosphorous, and magnesium. This chia seed pudding makes a great breakfast on the go, dessert, snack… the list goes on! Make these head of time and have breakfast READY when you wake up. Perfect for those of us who just can’t think first thing in the morning. I hope you enjoy it as much as I do!
Chocolate Protein Chia Seed Pudding
ingredients:
- 1/4 c chia seeds
- 1 c almond milk
- 1 T local honey
- 1 T raw cacao
- 1 scoop chocolate protein powder
- 1 t vanilla
- 1 c strawberries, sliced
- 2 T cacao nibs
instructions:
- Add all ingredients into a wide mouth mason jar. Blend using immersion blender. Can also be done in the blender. Refrigerate for at least 2 hours. For serving, layer 1/2 of pudding, 1/2 c strawberries, 1 T cacao nibs, second half of pudding, 1/2 c strawberries, 1 T of cacao nibs. Top with more cacao nibs. Enjoy!
